Water Grill in Downtown Bellevue is refocusing its raw bar on Pacific Northwest oysters.

The shift makes the Lincoln Square restaurant's menu distinct from the seafood chain's six other locations, 425 Magazine reported Friday, Aug. 28.

Chef Kaelon Sparks built the program, and his kitchen team studied the flavor and salinity differences among the region's oyster varieties, which number more than 65 across the Pacific Northwest, according to the magazine.

The updated raw bar at 700 Bellevue Way NE will rotate its selection based on what local suppliers have available each season.

Water Grill's broader seasonal seafood menu stays in place.

The oyster shift is part of a company-wide push by parent company King's Seafood Company, which operates seven Water Grill locations in California, Nevada, Colorado and Washington.

Each restaurant will spotlight a different local specialty alongside its regular offerings.
